Cheesy "Fried" Chicken Recipe

I have always been pretty skeptical of cooking too much in my microwave. I'd do popcorn, frozen veggies, heating up water and that kind of thing, but never really cooked in there. After years of being pretty narrow minded about my microwave's cooking capabilities I'm glad to say I've been using it to create some pretty amazing meals.

One of those meals is this yummy fried chicken dish. No extravagant ingredients or complicated prep, you can have dinner on the table in roughly half an hour. Please remember microwaves come in various size and all cook at different temperatures, so you may have to do a little experimenting and adjust the cooking times. Your meat thermometer is your friend!

Ingredients:

  • 1/4 cup margarine
  • 1 cup cornflake crumbs
  • 1/3 cup parmesan cheese
  • 2 tablespoons chopped parsley
  • 3 pounds chicken pieces, bone-in, skin on - I use legs and thighs most of the time
Place butter is a small microwavable bowl and cook on medium until butter is melted, approximately a minute. Mix cornflake crumbs, cheese, and parsley in bowl large enough to roll the chicken in. Dip the chicken in the margarine, coat thoroughly, place skin side up in a 9x9 square microwave safe baking dish. The thickest pieces of chicken should be toward the outside of the pan. Cover tightly with waxed paper and cook on high between 15 to 18 minutes, until chicken is tender. As I said, I'm a little nuts with the meat thermometer on this one, don't want to make anyone sick. Let stand covered for about ten minutes before serving.

Chile Relleno Casserole Recipe

Not long ago breakfast sausage was on sale at the local supermarket. I stocked up because I use it in so many things. One of my favorites is this delicious Tex Mex inspired casserole. Pair this no fuss dish with a nice green salad and you have a perfect meal!

Ingredients: 
1 lb. breakfast sausage, browned and drained
2 cups grated cheddar cheese
4 eggs
2 Tbsp. flour
1 12oz can evaporated milk
2 small cans chopped green chilies

Prep:
Preheat oven to 350 degrees. Beat eggs; add flour and milk. Mix well. Liberally grease a 9 x 13 casserole dish. Layer, beginning with the chilies, then sausage, then cheese. Pour egg mixture over the layers. Bake for 30 minutes, let stand for 10 minutes before serving.

Super easy and oh so tasty!
