Burrito Roast Recipe - HEB/ConAgra Meal Maker Challenge

HEB has a great online Combo Loco currently for Buy 2 Hunt’s 14. 5 oz Diced Tomatoes, get 1 Free, good Monday, July 26-Tuesday, Aug. 31. I love the fire roasted tomatoes with garlic variety. We use so many diced tomatoes around here that I try to always have them on hand. They are so versatile and come in hand with all sorts of dishes. Burrito Roast is one of our family favorites. It's a crockpot recipe, which I love to use during the busy back to school season.

2 lb. beef roast

1 14.5 oz can Hunt's fire roasted tomatoes with garlic

1 can cream of mushroom soup

1 medium onion, diced

can of diced green chilies or sliced fresh jalapenos, optional

corn or flour tortillas

shredded cheddar cheese

burrito toppings of choice

Add roast, tomatoes, soup, and onion to crockpot.

 Cook on low for 6 to 8 hours.

Shred the meat with two forks.

Serve meat mixture on tortillas with toppings of choice.
