ALERT, ALERT! The wi-fi is down. Repeat... The wi-fi is down!

Cue me racing around the house looking for a hot spot I can steal some vibes from my neighbors, calling Centurylink Tech. support, my brother, my husband, the police, the FBI and then, God help me, going to Wal Mart for a new router. I packed up the toddler and preschooler and dashed out the door before lunch so I could get back here and share my anxieties with you all. Generous wasn't it. Being completely honest, I am addicted to my computer. I love it! It keeps me from feeling like a hermit, or a recluse, or from going crazy from being home all the time. I use it for everything! There was a panic attack on the horizon when I thought I wouldn't be able to connect to get into chat or on Twitter today if needed.  This is what its come to folks, I am completely hopeless, and sadly, I like it.

I like knowing that I have @ShakeItMJ in my kitchen to chat with me while I'm cleaning up, or during nap time. I like to check the temperature and radar, to stalk Facebook, to Tweet my curly brown head off, and even to pay my bills. (OK, I don't really like to pay my bills, but I'd rather do it online than with paper because I'm a greenie like that.) I have to have it to check my balance in the bank, and God help me if I actually tried to balance my checkbook without a program. I would be eternally overdrawn! I use it to check on my kid's homework and grades, to send pictures to my brother in California, and to shop for amazing sales through Ebates . You catch my drift, its essential and I'm willing to bet that at least some of you understand this new dependency. 

This started me thinking in the shower. (It was that lightening fast shower where I was frantic to get my new router, which did nothing to solve the problem and will now be promptly returned.) What was it like back when this wasn't what we had? You remember those days when we wrote actual checks, and turned on the news, and talked to people who lived close to us. We had to go to the store and read books that were actually made of paper. FYI - I like my paper books. Its an anti-green thing, I know; I warned you there would be conflicts in my stories. Deal with it.

I suppose some people would call those simpler times. You know, the old people who don't know how to do the computer thing, and for them, it is simpler. Not for me. At least, I don't think so. I love having things right there at my fingertips, to be able to show my kids what a naked mole rat looks like with the click of a mouse. (Hahaha - that was a funny joke to me.)


Ugly little suckers aren't they. So now when the sing the Naked Mole Rap they know what they're singing about. I love to check my email and see who has been thinking about me, and to find hilarious videos on YouTube. I love that I have met a slew of great friends online that I'm sure would be my friends anyway if we lived closer than 500 miles apart. Its a learning experience and a socializing experience for me. That doesn't mean that I value my friends that live down the road from me any less. I am a firm believer that you can have friends online and friends "in real life" but aren't they both real life? Isn't it just a proximity issue?

I've heard vicious rumors that the Internet eats your brain and makes you stupider. (I know, its more stupid, I was being a smart ass.) It might, or it might be the exact opposite. It might make my attention span shorter and that is probably a really bad thing, or, it might make me be able to multi-task better. I don't know and I don't have a way to prove that myself. That being said, I also have no intentions of reading a book on it because sometimes I just don't want to know. 


So, this all comes down to good news, bad news. The good news is that although my Wi-Fi card seems to have died, I can attach to my Ethernet line and surf until my little pea brain catches fire. I hate my desk chair so I can play on my balance ball and develop a rock hard core while I Internet myself to death.  I can pay bills, tweet, blog, upload pictures, chat and check the news and weather. I can spend countless hours avoiding housework and chaos while talking to Maryann. I can check up on my kids at school, talk to my brother and order new shoes!

The bad news is that I have to either stay at this very uncomfortable desk attached to a wall or get my wireless card fixed. I'm, again, locked to my computer which I enjoy but is probably making me fat, lazy and full of attention problems. I will still have a semi-scummy house but I can blame that on the 4 kids, the dog and the asphalt working husband. Oh, and lets not forget the bees. I worry about the bees with all these wi-fi signals and cell phone signals. I like honey and flowers, and I'm not a fan of global warming and catastrophes, and I heard somewhere that maybe it was all our fault from all the buzzing signals we put out there. THAT is probably my biggest concern, even more than the fat, lazy attention problem and that should say a lot.

So, what if the wi-fi signals of the world went down for a week? What would you do? How would you react? What would you miss the most and what would you NOT miss?

Cutting Food Costs - The Family Root Cellar

My grandparents had a root cellar and as a child it was one of my favorite places. Nanny would take me down there and we would emerge with onions and potatoes. She'd then fry them up and serve them to Papa for lunch, along with greens and cornbread. I loved being in the root cellar and to this day fried taters and onions bring back fond childhood memories. I never realized what a blessing the root cellar was, but as an adult I do. As food prices climb, being able to store your own homegrown vegetables long term would be a huge help. I've always wanted one, but assumed you had to have a cellar or basement to make this happen.


Then I read The Complete Root Cellar Book: Building Plans, Uses, and 100 Recipes by Steve Maxwell and Jennifer MacKenzie. This book has detailed plans that can help you build your own root cellar whether you have basement space or live in a condo. With this book and a little hard work one can easily have a root cellar of their own. The plans are easy to understand even for someone who doesn't do many DIY projects. Hubby and I are super excited about putting together a root cellar of our own! Before long will we be preserving our own food and hopefully saving on our food costs.

This book also shares some wonderful recipes. If you've ever struggled with what to do with some of the produce you have stored, then you might want to check it out. Who doesn't love trying new recipes, right? I was really impressed with all the information presented within the book's pages.

Weekly Meal Plan #HEBack2School

It's a crazy second week of school here. Homework, sports practices, and our generally chaotic schedule have made meal planning a challenge. Here is what I have cooked up for our week. Many of the items came from the awesome Combo Loco Deals offered by HEB the past few weeks.

Monday: Manwich sloppy joes, fries, and fruit salad. Super easy and fast to put together and the family loves it.

Tuesday: Sweet & Sour Chicken LaChoy Creation. This product is a hit with the kids especially.

Wednesday: Crockpot Chili Dogs. Just toss everything in the pot and cook on low.

Thursday: Banquet Family Serve Entree. So, all I'm cooking are sides, but it's a crazy busy day here Thursday.

Friday: Jo Mama's World Famous Spaghetti. Yes, I'm taking another crack at homemade spaghetti sauce. Keep your fingers crossed for me.

Chickie Mama

It's a special day at the Devito house today and not just because I get to write for Nessa, which is a HUGE honor for someone who just started doing this. Today I got to be the Chickie Mama come full circle. I mentioned in one of my previous posts that I had jokingly told my husband that we should get some chicks and just make our own eggs. (I'm not really sure if you raise eggs, make eggs, get eggs... you understand.) So, I joke and the next thing I know we have Disney World for chickens in my back yard, complete with an underground tunnel, a coup with a window and screens and a ramp and electrical outlets. Its amazing. Not to mention that the caged part that they can take the tunnel UNDERGROUND to get in to would keep lions out. He build this stellar chicken hotel and brought home 10 fuzzy little wonders.

The kids and I, and even Kenny, loved these adorable little fluff balls and watched them grow - FAST. It wasn't long before they were ugly and no one wanted to hold them anymore. I figured that if no one wanted to hold them we wouldn't have to stand in the pole barn, for what I considered way too long, to stare at some ugly, loud stupid birds. I was wrong. They might have been ugly but they were starting to get personalities. Now, before you think I've really lost it, you have to listen. I would go outside to find Kenny (the hubs) watching these partially feathered little guys with a smirk on his face. Seriously, this is where he had been. I laughed until he called me over to watch, and guess what, he was right!! They were fun to watch. They were doing that whole "pecking order". I thought that was just some kind of old fashioned figure of speech,  but its not! They really do it. They fight and finally the head bird takes his place and the others fall in line. Best thing yet, I knew which ones I was going to like and which ones would get the ax first - the only problem, I wanted eggs and I still to this day can't tell a rooster from a hen.

Chicken Mafia      

Go ahead and laugh but I'm serious. Boy chickens don't have.... parts. Well, they do but you can't see them. Trust me, I've tried. I've Googled and YouTubed myself crazy trying to see a chicken penis and they aren't visible! I did, however, experience chicken sex the other day. Cross that one off the bucket list. It doesn't look pleasant but compared to cats, it seemed relatively painless for the female. So, now I have 2 distinguishable birds. One boy and one girl. The happy little couple. They might even be the two in the picture but since I can't tell a boy from a girl, its highly unlikely that I can tell you which two chickens are in that picture.

I stand outside and watch these crazy things every day and I have to say that for a girl who much prefers the indoors and gags at the idea of hamburger, I'm a fan. I love to talk to them and see what they do. My kids think they are as good as the dog as far as pets are concerned. (This may be a problem in a few weeks when a couple of the roosters "move to the neighbor's" aka move to the freezer.) This morning I was out checking out the gardens and letting them out for the day when I opened the door to the chicken coup and saw one of the brown hens in a nesting box. My Chickie Mama heart giggled! This poor little brown hen looked scared out of her teeny tiny mind and I knew what was happening. She sat completely still and just watched me begging me not to touch her. I shut the door and came back fifteen minutes or so later to find her still there but looking a little more relieved. I'm sure that sounds ridiculous, but she really did. She stood up and this is what followed:
CHICKEN: *Nervous look. Stands up. Looks under her squatty little body.*
ME: Hey chickey wickey. Don't be afraid. *Giggles*
CHICKEN: *Nervous look. Checks again.* What the hell is that? 
ME: *Squeaks and runs for the camera.* 
CHICKEN: *Peck, peck, peck* What. Is. That?!
ME: You did it!! Good job Chickey Wickey!! *Cue strange Chickie Mama emotions. Start snapping photos.*
CHICKEN: *Peck, peck, peck. Shrugs. Steps out of the coop.* Well, that was strange.
ME: *Snatch the egg and go inside to post on FB, Twitter and to text the hubs and call my mom.*

Call me crazy, you wouldn't be the first, but it was awesome. I'm a chicken grandma! My little fuzzy babies are laying eggs of their own! I'm probably taking this a bit far, but as I said, I'm not much of an outdoors kind of girl and I'm certainly not the farmer type. Picking vegetables in my garden freaks me out. Tall grass gives me anxiety but this, THIS was amazing. I've got a baby chick, or at least an egg. In my fridge. I feel guilty and sad for the chicken now. And I digress....

Megan is a 34 year old mother of four kids ranging from ages 10 to 1. After teaching public school for 2 years and alternative school part time for 8 1/2 years, she decided to take some time off to explore what was waiting around the bend and to spend time with her two youngest children. Teaching in an alternative school for suspension, expulsion and probation kids and also a teen mom program has taught her not to take things too seriously and to appreciate the chaos that comes with "normal" life. After all, there are worse things than green and purple hair. (Not that she would know anything about purple hair. *shifty eyes*)

In her blog, Megan hopes to be able to share some of the fun and chaos that comes from living in the mid west to be near your family when you are either a city girl, or a southern girl at heart. She hopes that you'll be able to laugh and cry along with her, share your stories and learn about what makes her tick. Burrito Roast Recipe - HEB/ConAgra Meal Maker Challenge

HEB has a great online Combo Loco currently for Buy 2 Hunt’s 14. 5 oz Diced Tomatoes, get 1 Free, good Monday, July 26-Tuesday, Aug. 31. I love the fire roasted tomatoes with garlic variety. We use so many diced tomatoes around here that I try to always have them on hand. They are so versatile and come in hand with all sorts of dishes. Burrito Roast is one of our family favorites. It's a crockpot recipe, which I love to use during the busy back to school season.

2 lb. beef roast

1 14.5 oz can Hunt's fire roasted tomatoes with garlic

1 can cream of mushroom soup

1 medium onion, diced

can of diced green chilies or sliced fresh jalapenos, optional

corn or flour tortillas

shredded cheddar cheese

burrito toppings of choice

Add roast, tomatoes, soup, and onion to crockpot.

 Cook on low for 6 to 8 hours.

Shred the meat with two forks.

Serve meat mixture on tortillas with toppings of choice.

See? It's super quick and easy, plus it tastes wonderful. I hope you enjoy it!

Five Lessons Every Kid Should Learn

Parenting is a hard job, so much harder than I'd ever imagined it would be. The hospital forgot to send me home with an instruction manual when I brought my sweet babies home, so I've had to fumble along on my own. Have I made mistakes? Absolutely. Who hasn't? But, I've also done the best I could when it comes to raising my kiddos. I've been thinking about the lessons we teach our children and what is really important. I'm not a complicated gal, so my life lessons for my children are pretty straightforward
.
1. To earn respect, you must treat others with respect. Respect is not a birthright, it must be earned. Simply put, this is the golden rule. If you want to be respected, treat those around you with the respect you seek.

2. You are a child, not an adult. I hate to burst your bubble kids, but I'm the parent and you are the child. You do not in fact know everything! I've been around longer than you and I have a little bit more wisdom under my belt. Try to remember this rather when you want to argue with me.

3. Turning 18 is not a ticket to living carefree. When you turn 18 you are legally adult, this is true. While you are planning your great escape from the house, remeber you are entering the real world. The real world is exciting, yes but it comes with responsibilities. Welcome to the not so glamarous world of adulthood. Have fun, but remember that now you have to do things like pay your own bills.

4. Your parents are still your parents, whether you are 9 or 90. You should always treat them with respect and love. Sure, you might have thought we were hard on you when you were growing up, but it's because we were trying to teach you how to be a responsible, remarkable adult. Please give us some credit for doing what we thought was best for you.

5. No, you cannot hide your green beans in your milk. Lying is never right, so please don't try it. Parents do have eyes in the back of their heads and I guarantee we ALWAYS find out about the things you lie about. Save us all some headaches and just be truthful. I assure you, lying will always get you in more trouble than being honest will.

Spicy Ginger Pork - HEB/ConAgra Meal Maker Challenge



Last night's dinner is a family favorite that includes two products that are part of HEB Combo Loco deals. Look in store to find coupons for Buy 2, get 1 Free 24 oz. Hunts Ketchup - Wednesday, Aug. 4-Tuesday, Aug. 31. Check online to get a coupon for Buy 21-23 oz. LaChoy Creation, get a free 10 oz. La Choy Sauce - Monday, July 26-Tuesday, Aug. 31. These two ingredients mixed with a few pantry items create a wonderful, Asian inspired meal.


Spicy Ginger Pork
1 lb. boneless pork chops, cut into bite size pieces
2 T. vegetable oil
1/8 c. brown sugar
1 tsp. ground ginger
1/2 c. La Choy soy sauce
1/4 c. Hunt's ketchup
2 tsp. minced garlic
dash of cayenne pepper
1/8 c. toasted sesame seeds
Cook pork chop pieces in oil over medium high heat, until just browned.
Mix remaining ingredients in a bowl, pour over pork pieces.

Reduce heat to simmer, cook covered for 20 minutes, stirring occasionally.

We normally cook up a bag of stir fry veggies with this and serve over fried rice.

This recipe is also great as a marinade for pork chops for the grill, or even to bake in the oven. Don't you just love versatile recipes?

Serves: 4 to 6
Preparation Time: 10 to 15 minutes
Grill Time: 8 to 12 minutes

INGREDIENTS

2 pounds beef outside skirt steak, clean

Dry Rub

2 tablespoons minced fresh rosemary
2 tablespoons minced fresh thyme
4 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons kosher salt
2 tablespoons cracked black pepper
¼ cup peanut oil
2 lemons, cut in half
1 can (21 ounces) BUSH’S® Texas Ranchero Grillin’ Beans®


Bring meat to room temperature. Light the grill and bring to 350 degrees Fahrenheit.

Combine rosemary, thyme, chili powder, cumin, kosher salt and black pepper to make dry rub.
Rub meat with peanut oil. Season well with dry rub.

With grill heated to at least 350 degrees, place meat on grill for 4 minutes a side for medium rare.

Just before the meat is done, squeeze lemon all over the steak while still on the grill. Check temperature with a thermometer; remove from grill when the internal temperature reaches 165 degrees Fahrenheit.

Tim Love’s Grilled Skin-On Chicken Breast Recipe created exclusively for Bush’s® Grillin’ Beans®


INGREDIENTS

Marinade

1 gallon of water
½ cup salt
1 tablespoon chili flakes
3 garlic cloves
¼ cup sugar
1 medium chicken breasts with skin
Paper towels
3 tablespoons minced garlic
¼ cup chili powder
¼ cup peanut oil
Kosher salt
Pepper
1 can (21 ounces) BUSH’S® Black Bean Fiesta Grillin’ Beans®

Serve with a citrus-arugula salad.*

Combine water, salt, chili flakes, garlic cloves and sugar in a container. Mix until salt and sugar dissolve. Add chicken breasts to
mixture; cover and marinate in the refrigerator for at least 2 hours.

Remove chicken from marinade and pat dry with paper towels. Combine minced garlic and chili powder in a small bowl, add
peanut oil and mix together. Rub chicken breasts with chili powder mixture and lightly season each breast with salt and pepper.

With grill heated to at least 350 degrees Fahrenheit, place chicken breasts on grill, searing each side for 9 to 11 minutes. Cook
breast skin side down first, searing it until skin is crispy brown. Move chicken to warm side of grill (not directly over hot coals) and
finish cooking for 13 to 16 minutes, until internal temperature reaches 165 degrees Fahrenheit (juices should run clear).

Serve with one can (21 ounces) BUSH’S® Black Bean Fiesta Grillin’ Beans®.


*Citrus-Arugula Salad

½ pound arugula
Kosher salt
Fresh cracked pepper


Citrus Dressing

2 tablespoons of extra virgin olive oil
2 limes, juiced

Place arugula in a bowl and
drizzle olive oil, lime juice, salt
and pepper over it.

Chef’s Secret: If you need more time indoors, after the chicken is seared you can finish cooking it in the oven for 13 to 16 minutes at 350
degrees Fahrenheit, until internal temperature reaches 165 degrees Fahrenheit (juices should run clear).

Serves: 4 to 6
Preparation Time: 5 to 10 minutes (at least 2 hours marinating)
Grill Time: 18 to 22 minutes, Oven time: 13 to 16 minutes

As my regular readers know, I live in a very small town. One of the things my pal Lynette and I look forward to weekly is reading the police dispatch log. You would not believe some of the things people call the police about. Recently there has been a squirrel in a kitchen, a tumbleweed rolling down the road, possibly stolen cattle, and my personal favorite "dark waves". These items always make us giggle. Imagine how surprised I was when I had to make my own strange call for help today.

It all started when I took Pebbles out in the back yard first thing this morning. I was on the phone with my mother-in-law when I heard rustling in the tree above me. I looked up and initially thought I was looking at a snake, which had me completely freaked out. Then I thought I was seeing a opossum tail, but neither explanation seemed to look like what I was seeing. Do you see it?

I was really curious as to what I was seeing, so I walked around to get a better view. That's when I saw this.
Did I mention that our English Pointer Shelby went missing yesterday afternoon? We spent hours looking for her and had decided she must have jumped the fence and gotten taken to doggie jail. The one place I never thought to look was 20 feet up in our giant pecan tree. Yes, that's exactly where she was. Her legs were stuck in a fork and she had been up there since about 4 yesterday afternoon. So, I called my husband and neighbors, having no idea what to.


Our extension ladder would not reach far enough. Lynette took hubby up to his work, where his boss thankfully loaned us a longer one. On the way home, Lynette saw a Verizon worker in a bucket truck and asked him to come help us. Unfortunately there was no way to get the bucket to the dog, but he was just as baffled as we were. He helped hubby get the longer ladder up there, but unfortunately, hubby's fear of heights and the dogs fear of being rescued were working against us. Mr. Verizon left, after taking several pics on his phone, wishing us luck. We then gave up and called the dispatcher, but the fire department was going to be awhile, due to being out on a call. I was getting really worried at this point.

Enter Michelle, a friend from across the street who is both tall and not afraid of heights. We fashioned a sling out of a bed sheet and up she went.






This is a 28 foot extension ladder. Michelle was halfway down when I took this pic. Thanks to our hero Michelle, Shelby is back on the ground and doing fine. It was a really weird morning.

Cowboy Beans & Combo Locos - HEB/ConAgra Back to School Meal Maker Challenge

The past week was a great time to try out fast and easy meal solutions. This mama got sick and ran a fever of 102 for nearly a week, so cooking was not high on my priority list. Unfortunately, my family seems to think I'm the only one capable of making meals, so I had to get creative. Thankfully, HEB had some great Combo Loco deals that made life a little easier.

The HEB Fully Cooked Burgers Combo Loco in the weekly ad was a real lifesaver. You buy the fully cooked burger patties and get soda, chips, dip, cheese, and buns free. This was fabulous as it provided a quick lunch for the kiddos and hubby while I was sick. They could prepare it on their own, which was great the few days I literally couldn't get out of bed. I'm so glad I picked up this awesome Combo Loco.

The Banquet Family Serve Entree online Combo Loco came in handy too. You buy one Banquet Family Size entree and get two of the new Banquet Fruit Pies free. This made for a great dinner that even hubby could cook. We had the entree, frozen veggies, bagged salad, and a delicious dessert. It took about 20 minutes to prepare, everyone loved it, and it was super simple. I love fast, easy, and good!


I did actually do some cooking during the week too. Being sick, I was craving comfort food. When you feel awful, spending all day in the kitchen isn't at all appealing. So, I pulled out one of my favorite time saving appliances, my crockpot, and put together a pot of Cowboy Beans.



Cowboy Beans:

1 (12oz) package Hebrew National Franks, sliced

3 (15oz) cans VanCamp's Pork & Beans

1/2 cup Hunt's Ketchup

1/4 cup chopped onions

1/4 cup molasses

2 teaspoons Gulden's Spicy Mustard

Mix all ingredients in a 3 quart crockpot, cook on low three to four hours.
